I know for the last year and change, we all have been hibernating, but I was excited to check out the 2-year-old Smōk (pronounced Smoke), situated in The Source (which also now boasts a full-fledged hotel too). It’s a fast-casual BBQ restaurant that is a bit more upscale than you would expect, with a terrific outdoor patio that is shielded from Brighton Boulevard by the surrounding buildings. Smōk’s general manager Micky brought us a platter full of their faves to try out and we loved. it. all.
Executive Chef/Owner Bill Espiricueta is a Denver local, although he was born in Austin, and got his professional start in Kansas City, then headed to Dallas. He eventually found his way to Colorado (don’t we all?) where worked closely for many years with Denver’s most esteemed culinary talent. Chef Bill executes an easy-going barbecue-joint vibe with the high expectations a fine-dining chef. (No, seriously, everything was delish.)
Personally, I am finding my way back around Denver after the last few years and looking at a map, your realize how easy it would be to meet up at Smōk before a baseball game or a concert at The Mission. We definitely plan to be back for just that as soon as possible!
